In 1976 I finished secondary school for catering. During the schooling I worked as seasonal worker in a private hotel ( pansion Petritz) in Opatija , Croatia . I was preparing breakfast, purchasing food, cleaning the kitchen, preparing and cleaning the fish. I finished my catering practice on a trading vessel. There I gained a lot of knowledge from experienced cooks. Especially I learnt a lot about preparing fishes and Italian dishes. After five years of working on the ships, I worked as an assistant of the chef in Lovranu , Croatia in the restaurant 'Kvarner' for one year. In the 1989 I started to work in hotels in Austria . I worked for the firm Alpine-mar in Klagenfurt (Hotel Raichenauerhof), in Hotel Eisenhut, Hotel Seewirt, pizzeria Raichenau, caffe de Paris, Hotel Kollmhof, and Hotel Mozzarthof. In Austria I worked as: cook, chef, pizzeria and pasta, Chef de Partie, kitchen assistant, sous chef and in two hotels as chef de cuisine. In the 1995 I opened a firm in Maribor , Slovenia for trading with fish. After four years I started to work in the local restaurant as a chef de cuisine. In the 2002 I started to learn finenesses of slow-food. I am constantly educating in gastronomy of old cuisines, Mediterranean cuisine, Italian cuisine, dalmatian- istrian cuisine, which is very similar to Italian. I also started to learn something about Russian cuisine. I am creative, innovative, flexible and ready for new challenges. I have a certificate ' Food hygiene certificate'. In the catering and in the trade of fish I have more than 28 years of experience. Between the War in Croatia and Bosnia I worked as volunteer in Austria ( Vienna ) in the centre for refugees. I am specialized in preparing fish, dishes from grill, fish salads, dishes from rice, pasta, carpacio, fish marinades, venison and preparing slow-food and the use of herbs and spices. I speak good Italian and I speak and write Slovene, Croatian, German and Russian. I also speak a little English. I am married and I have one son, who is employed.
